Carrot Cupcakes
Oscar Burlin the magician, here. I want to share the recipe for one of my favorite party snacks with you. I raise rabbits for my magic shows and buy carrots in bulk to feed them. Instead of letting the extra carrots go to waste, I like to make delicious carrot cupcakes. This recipe can be a little more challenging than some of the others you’ll find here, so be sure to have your parents help with the baking. These are perfect for the spring, and especially good for Easter with its carrot theme. Rabbits, including the Easter Bunny, love carrots and so should you! Carrots are healthy for you and also delicious. They’re even more so delicious when baked into these cupcakes and you can make and share with your friends at a party. You can also have your parents cut a carrot into pumpkin shapes and serve these on Halloween. Careful with serving them to friends, though, for they’ll quickly disappear and, unlike a magic trick, it won’t be hard to see how: hungry bellies. Just follow the eleven easy steps below and you’ll have yourself a party favorite to serve your friends in no time at all. |

Directions
Make some Carrot Cupcakes by following these 11 easy steps.
Step 1:
Assemble all your ingredients.
Step 2:
Preheat oven to 350 degrees.
Step 3:
Combine dry ingredients: baking powder, baking soda, cinnamon, flour, nutmeg, salt, and sugar in bowl.
Step 4:
In a second bowl combine shredded carrots and oil.
Step 5:
Slowly add mixture from first bowl to second bowl. Stir until just mixed.
Step 6:
Add beaten eggs. Stir until just mixed once more.
Step 7:
Grease or line muffin tin. Fill each slot 2/3 of the way full with mixture.
Step 8:
Bake for 13 minutes or until a golden brown. Cool in refrigerator on on counter.
Step 9:
Combine all frosting ingredients and mix until creamy.
Step 10:
When muffins have cool, spread frosting on.
Step 11:
Decorate with carrots cut in pumpkin shapes or with sprinkles (optional). Enjoy!
